This smoke burger is the ultimate way to up your smash burger game. Our chef Matt Basile had to try out the new viral trend of making smoked smash burgers, and luckily the Alchemy is the perfect machine to cook and smoke low and slow and then sear hot and fast. All it takes is a quick extra step of smoking your balls of ground beef at 200F for eight minutes and then letting them cool in the fridge to make the best smash burgers ever. Top each smoked smash patty with American cheese and toast your brioche bun on the flattop. Finally, make a homemade hot animal-style sauce to dress your burgers and the perfect smoked smash burger is complete.

Ingredients

1 lb ground beef

½ tsp salt

½ tsp pepper

2 tbsp mayo

1 tbsp hot yellow mustard

1 tsp ketchup
-
5 pickled pearl onions
-
1 dill pickle
-
3 slices American cheese
-
1 sesame seed brioche bun

Instructions
Roll the ground beef into three balls (about 4oz each) and place on a tray lined with parchment paper.
Set your smoker up as usual. While it is coming to temp, place your balls of ground meat into the smoker to get a hit of smoke at a low temp, at around 200F for about 8 minutes.
Remove and place in the fridge for about 10 minutes.
To make your sauce, finely chop the pickle and pickled pearl onions. Add them to a bowl and mix with the mustard, mayo and ketchup. Set aside.
When you’re ready to make your burgers, drizzle canola oil on the hot flattop. Place each ball of meat on the flattop and season with salt and pepper and allow to cook about 1 minute.
Using a piece of parchment paper and a metal spatula, smash the burgers. Let them cook 1-2 minutes and flip. Add a slice of American cheese to each patty and cook about 1-2 minutes more or until cooked through. Toast the brioche bun on the flattop.
Stack the burgers on top of each other and place on the bottom bun, top with the hot animal style sauce, close the top bun and enjoy.
