Queso Fundido Chorizo Sausage Rolls

These queso fundido chorizo sausage rolls are great for entertaining this holiday season, or anytime! Make them regular size or cut them up for a great finger food appetizer. Made with smoked chorizo, tajin baked puff pastry and melty, creamy, cheesy queso fundido poured over top. The pico de gallo adds a nice a freshness and brightness to the richness and saltiness of the sausage roll and fundido.

3 chorizo sausage

3 jalapenos, divided

2 tomatoes, roughly chopped

2 tbsp finely chopped red onion

Juice from 1 lime

3-4 tbsp finely chopped cilantro

198g puff pastry (half a Tenderflake package)

½ cup butter

200ml cream

1-2 tbsp all-purpose flour

150g mild cheddar cheese

3 slices American cheese

Instructions
Set smoker to 275-300F.
Place the chorizo in the smoker for about 15 minutes.
Finely chop the red onion, remove the seeds and membrane from the jalapenos and finely chop, reserving one for the queso fundidio. Roughly dice the tomatoes and chop the cilantro. Place everything into a bowl and squeeze in the juice from one lime. Season with salt and mix, set aside.
Grate the cheddar cheese into a bowl. Set aside.
Once you remove the chorizo from the smoker, sear on both sides on the flattop. Set aside when done. Bring the smoker up to 350F.
Roll out the puff pastry into a large rectangle, and until about 1/8th inch thick. Cut into 3 long triangles. Place the chorizo at the base of the triangle and roll it towards the point, wrapping it in the puff pastry. Cut small slits in the top of the pastry. Brush a pizza pan or metal tray with oil, or use a piece of parchment paper, and place the sausage rolls on it. Brush sausage rolls with egg wash and sprinkle with tajin. Place in the smoker for 15 minutes, or until puff pastry is golden and cooked through.
While the sausage rolls bake, make the queso fundido. Add a cast iron pan to the elevated grill rack and add butter. Let the butter melt and then add in the reserved chopped jalapenos and mix. Let cook and soften 1-2 minutes. Sprinkle in the flour slowly while mixing. Once incorporated into the butter, slowly pour in the cream a bit at a time while mixing. Add in the grated cheese and mix until melted. Add the slices of American cheese and mix until melted and smooth. Remove from the heat.
Remove the sausage rolls from the smoker and place on a plate. Pour the queso fundido over top and then garnish with the pico de gallo.
